Crockpot Coconut Curry Shrimp

Here's an easy dish for a week night meal that is super healthy! Without the rice, it would be paleo :)

2 T curry powder
1 tsp cumin
1 tsp cayenne
1 tsp ginger
3 cloves garlic
1 cup bell pepper, chopped
1 yellow onion, sliced
1 can coconut milk
1 cup chicken broth
1 lb shrimp
2 cups brown basmati rice

Mix all ingredients except for rice in the crockpot, and stir. Cook on high for about 3 hours. Serve over rice and enjoy!

  1. If I wanted to cook this on low while I run errands for the day, do you think it would cook in five hours?
